Bean of the Month



Lentils belong to the legume family. They contain high levels of protein, fiber, folic acid, Vitamin B, iron and potassium and come in a variety of colors. Lentils are among the oldest crops domesticated in the Old World with carbonized remains found alongside human habitations dating to 11,000 BC in Greece. These small seeds are chiefly used in soups and stews but can also be made into delicious salads.


Harvest of the Month



Kumquats closely resemble oranges in color and shape but are about the size of a large grape. Kumquats are native to China and mean “Golden Orange.” In contrast to oranges the peel of the kumquat is sweet and edible while the juicy flesh is tart. Kumquats are an excellent source of vitamin C and plant compounds in kumquats help bolster the immune system. They’re also rich in fiber and water, making them a weight loss friendly food.  Kumquats are best eaten whole which mixes the sweet and tart flavors.

In 2015 the USDA mandated on going education for all school nutrition professionals through a mandate called Professional Standards. Professional Standards is a program that was implemented in order to insure all staff who are serving food to our nations youth are appropriately trained to do so.

Every 3 years in most states, the Department of Education reviews each school nutrition
department in the country. During that review, our professional standards training
records must be provided and justified. not only provides the
best in on going education but also tracks our staffs progress and supplies us with
reports that satisfy all state department request.
